Owned and operated by Siobhan Dooley and head chef Tim Sweeney, The Last Jar is everything you won’t see in a run of the mill Irish-Pub franchise full of Gaelic clichés.
The duo, who first met working at the Michelin star restaurant “The Commons” in Dublin, had a vision to bring real Irish cuisine and the rich culture that accompanies true Irish hospitality to Melbourne.
The vision reached fruition when the former Old Royal Artillery Hotel building, which at the time was the home of Melbourne Punk Institution “The Arthouse”, became available for lease. In late 2011 Dooley and Sweeney took over the lease of the establishment and The Last Jar was born.
When the sun shines, the secluded beer garden behind the pub is the perfect spot for a yarn over a cold cider or a bowl of homemade Guinness ice cream. On cooler days locals perch up at the bar or beside the fireplace, warming themselves from the inside-out with a whiskey or clove infused ‘hot toddy’.
